Apple pie is great any time of the year, but a slice is always nice in the summertime. A few years ago I took on a summer cooking challenge, where I tackled a new recipe every week. Want to make your own mini apple pies? Here’s the run down:
What you’ll need:
- Pie crust – I opted for a pre-made crust, but there are tons of recipes out there to make your own.
- 7 Apples, diced
For the sauce, heat together
- 3/4 cup sugar
- 3/4 brown sugar
- 1 tablespoon lemon juice
- 2 teaspoons vanilla
- 2 tablespoons flour
- Cinnamon – just a few dashes
What to do:
Step 1: Use a cup to measure crust, using a smaller cup for the tops. You may need to re-roll left-over pie crust to make more.
Step 2: Grease and flour a cupcake pan.
Step 3: Line the bottom of a cupcake tray with the pie crust.
Step 3: Add sauce and apples to pie shells, cover with smaller crust top, and pinch slightly to secure.
Step 4: Bake around 15-20 minuets or until crust becomes golden brown. These mini pies won’t take as long to cook as a full pie.
Let cool, top with ice cream or whipped cream and enjoy!
