It’s time to get tropical! I whipped up some pineapple chicken skewers for this week’s Treats and Eats. There were just a few simple steps to this fun, easy recipe that you can try any night of the week. Here’s how I did it.
What you’ll need:
- 1 red onion, diced big
- 1 yellow bell pepper, diced
- 1 red bell pepper, diced
- 1 orange bell pepper, diced
- 2 chicken breasts, diced
- 1 can of pineapples, diced
- Seasoning of your choice
- 10 skewer sticks
What to do:
Step 1: Lightly season diced chicken with seasoning of your choice. I used a salt, pepper, cajun combination. Let marinate overnight with 1/2 of the pineapple can juice.
Step 2: Fire up the grill
Step 3: Pick a pattern of your own and add each to the skewer. I did pineapple, chicken, onion, yellow pepper, red pepper, orange pepper, repeat.
Step 4: Grill for 15-20 minutes, flipping occasionally. Add remaining pineapple juice while cooking for added flavor.
Step 5: Serve with a side of rice or other favorite and enjoy.
You can substitute any veggies or meat and make it your own. There really isn’t a right or wrong so just have fun.
