Chocolate Raspberry Lava Cupcakes

Calling all chocolate lovers! I’ve got another delicious dessert recipe to share with you. Whip up these explosive lava cupcakes for a sweet finish to the day. Here’s how I did it.

What you’ll need:

8 ounces of chocolate
1 stick of butter (roughly 8 tablespoons)
1 cup of sugar
4 eggs
2 teaspoons of vanilla extract
1 cup flour
1/2 cup of raspberries, rinsed
1/2 cup heavy cream
8 more ounces of chocolate
2 cups of water to boil
Sauce pan
Heat-safe bowl

What to do:

Step 1: Preheat oven to 365 degrees Fahrenheit .
Step 2: Melt and stir 8 ounces of chocolate with butter.
Step 3: Add in sugar and flour.
Step 4: Beat in eggs. Add vanilla and stir.
Step 5: Line or grease a cupcake pan. Pour in mix.
Step 6: Bake for about 7-10 minutes or until outsides firm.
Step 7: While baking, bring water to a boil in sauce pan.
Step 8: Add 8 ounces of chocolate to heat-safe bowl.
Step 9: Place bowl on top of pot of water.
Step 10: Stir in heavy cream as needed.
Step 11: Remove from heat once mixture forms.
Step 12: Check on cakes in the oven. If you overcook them, you can always add some of the heavy cream-chocolate mix to the center for extra lava.
Step 13: Using a spoon, top each cake with heavy cream-chocolate mix.
Top with raspberries.
Serve with vanilla ice cream for an extra treat.
